Soaked Granola Bars

This is an easy recipe for granola bars that are slightly chewy and very satisfying.  Soaking the grains in yogurt overnight makes them easier to digest and even more nutritious.  These even make a good breakfast on the go!

1 1/2 cups rolled oats

1 cup spelt or whole wheat flour

1/2 cup butter, softened

3/4 cup whole milk yogurt

Combine these first four ingredients.  Let sit at room temperature, covered, for 12 – 24 hours.

1 egg

1/4 teaspoon sea salt

2 teaspoons vanilla extract

3/4 cup Rapadura or maple sugar

1/2 cup unsweetened, finely shredded coconut

1/2 cup chopped dates

1/2 cup chopped Crispy Nuts* (I used cashews)

Preheat the oven to 350.  Use a mixer to blend in the remaining ingredients.  Press the mixture into a 9X13 pan or large stoneware bar pan.  Bake until the edges are beginning to brown.  Cut into rectangles while still slightly warm.  Store the granola bars in the refrigerator.

*Crispy Nuts are nuts that have been soaked overnight in salted water and then dried.  See Nourishing Traditions  by Sally Fallon for the recipe.

  1. Do you think I could sub the butter out for coconut oil? Not sure how it would interact during the soaking process.

    • I think coconut oil would work just fine. I’ve used it in other soaked recipes. It doesn’t seem to inhibit good bacteria in the way that it inhibits bad bacteria, mold and viruses.
